2. Logistics During Sterilization


  • Example (Enoki): The process includes mixing, bottling, sterilization, inoculation, scratching, germination, rolling, fruiting, and harvesting.

  • Traditional Method: Uses sterilization carts pushed manually into autoclaves.

  • Problems: Inefficient, poor (hot) working conditions, high staff turnover, and cart maintenance issues.


3. Fixed vs. Mobile Racks: A Comparison
