Sterilization and Cooling of King Oyster Mushroom Cultivation Bags and Bottles

For the cultivation of Pleurotus eryngii (king oyster mushroom), autoclaving is generally adopted. The system should be held at 0.15 MPa for 2 to 3 hours, and the specific operating procedures may refer to those used for enoki mushroom (Flammulina velutipes) sterilization.


After sterilization completes, sterilization trolleys are moved into the cooling room for two-stage cooling once the internal temperature of the cultivation bags drops to 70–80°C. Positive-pressure filtered air is maintained inside the cooling room throughout the cooling phase to enable convective heat exchange.


Once the temperature at the shoulder of the bags or bottles falls below 35°C, the trolleys are transferred to the secondary cooling chamber. Refrigeration units are activated for forced cooling until the core temperature of the substrate inside bags or bottles decreases below 25°C.


Heat exchange takes place between the cultivation containers and the ambient environment while they cool after exiting the autoclave. To prevent contamination introduced by air exchange, the cooling room must maintain strict air purification. Medium-efficiency or high-efficiency air filters are installed to keep the space at Class 100,000 cleanliness level.
